- 4 slices of dry rye toast or VitaBiscuits
- Very thin spread of Marmite
- Laughing Cow spreadable cheese wedge. Either regular, French onion, or herb and garlic.
- Cut-up bell pepper
Var.:sliced, boiled fresh beets; beet salad (beets, onion, white vinegar, mustard powder, caraway seeds)
The Faux-Erudite
- Fresh artichoke, steamed for 20 minutes
- 2 tsp. packet of powdered Hollondaise sauce
- 4 Tbs. half-and-half
Var.: Bernaise sauce, out of the packet, also works as an edible substitute.
The Greek
- 3-4 cups mixed baby spinach, romaine lettuce
- 1 Tbs. olive oil
- 1 Tbs. Balsamic vinegar
- 1.5-2 oz. Feta cheese
- Fresh-roasted tomatoes
- Nicoise and/or Kalamata and/or dry-cured olives
Sorority Girl Special
- Lean Cuisine/SmartOne microwave meal
- Diet soda
Var.: Crystal Light, water with lemon and/or lime
Poor-Man Benedict
- 2 poached eggs
- 2 tsp. Hollondaise powder
- 4 Tbs. half-and-half
Living alone means eating the same four-six meals repeatedly. I guess these aren’t such terrible choices?
